As many of you know, I have a big obsession with cows. I love them: how large and gentle they are, and I love how beautiful they are. Their history is just as inspiring, one that is in tune with the environment they were developed in. Each week I am going to devote my tweets to one cow breed; called #thursCow. This week's cow is the Hereford, which are one of my favorite cows because they are so gentle, in fact they were used as oxen so they are extremely calm and do not mind human company at all. I am biased against Black Angus only because of my close call with a bull. And I also resent the successful branding campaign that BIG beef has been able to inflict on America, in most cases Black Angus beef is feedlot beef.My father has a lot of Hereford cows, but because of their large heads they sometimes have trouble passing calves, so we do not breed the cows to Hereford Bulls. Nonetheless, they are excellent beef cows, and I would love for them to get as much love as the Black Angus here in America.
Even though they were developed in England where pastures are non-brittle (moist and restorative) they excel in brittle grass environments like Australia and Argentina who are possibly the best grass-fed cattle ranchers in the world.

Those Herefords look so lovely! Damn, I miss the French countryside and its Montbéliardes, and in the Alp mountains, the Abondances!
I made my father buy Charolais because I love french cows. Their coats are too short for the weather but we are crossing them with highlands! Do you have pictures from the alps? I can not decide what I love more cows or mountains, together it is heaven!
I, too, love cows. There are many many fields of them around where I live and I stop all the time while driving by just to watch them!

And your blog is simply gorgeous! I am so glad I found it, living in Vermont I am absolutely committed to growing my own produce and supporting the local farms and start up businesses in the area. I really think you can taste the love and passion that goes into everything. Currently I'm working on an event to benefit my area's farm and food link (RAFFL) which will highlight local chefs who only use produce from the area.
